Recipe: Black Tagliatelle with Shrimp

Ingredients (for 2 people):
• 200g black noodles (pasta with cuttlefish ink)
• 200 g peeled shrimp
• 2 cloves of minced garlic
• Olive oil to taste
• Salt and pepper to taste
• A touch of chili pepper (optional)
• Fresh basil leaves to finish
• Lemon zest (optional)

Preparation:

  1. Cook the black noodles in salted water until al dente. Drain and set aside.
  2. In a skillet or cast iron casserole, heat a generous amount of olive oil and sauté the garlic until it begins to brown.
  3. Add the shrimp and cook for 2 to 3 minutes on each side, until pink. Season with salt, pepper, and, if desired, a little chili powder.
  4. Fold the cooked pasta into the shrimp, stirring well to absorb the flavors.
  5. Serve with fresh basil leaves and a squeeze of lemon zest.
